How do I choose the durations?
Use a proven recipe’s timings for your yeast dose or starter, flour, dough size, and temperatures. The values shown when you open this planner are examples, not a tested fermentation schedule. Preheat and bake times also depend on your oven and baking surface.

What order does the planner use?
Dough-ball cold fermentation: mix → room-temperature bulk → divide and ball → fridge → warm-up and final proof → stretch and top → bake.
Whole-dough cold fermentation moves the fridge stage before dividing and balling. The no-fridge option skips cold fermentation. An optional preferment build and maturation come before mixing. Choose the sequence that matches your recipe; add any extra rests to the appropriate duration.

All dates and times use this device’s time zone, shown above the timeline. The target is when your first pizza goes into the oven. The estimated finish adds the first pizza’s bake time.
